Beverage Type: Belgian Strong Dark Ale On the same path as the Belgian Dark Ale but obviously higher in alcohol with more of an all around character. The alcohol character can be deceivingly hidden or can be very bold and in your face. Look for lots of complexity within a delicate palate. Hop and malt character can vary, most are fruity and may have mild dark malt flavors. Phenols will range from minimal to high and most will be light on the hops. All in all most are spicy and alcoholic.



Corsendonk Christmas Ale is brewed every year during the holiday season and is availabel from Novemver until the end of February. For this reddish brown Christmas beer, the Corsendonk bewer uses roasted special malts, the finest hops and selected yeasts, spiced up with a touch of coriander. With its delicate malty nose, Corsendonk Christmas Ale has everything what only the very best Christmas beer could possibly offer: a round, balanced taste with a dry and refined aftertaste.

Beverage Type: Belgian Abbey Style Belgian Pales consume the Belgian brewing scene, and were initially brewed to compete with Pilseners during the WWII time frame. They differ from other regional Pale Ale varieties, by traditionally being less bitter, using aged hops for a delicate hop finish, and boasting sweetish to toasty malt overtones. They should be decanted properly, leaving the yeast in the bottle. This will showcase their brilliant color range from pale straw yellow to amber hues. Most will be crowned with thick, clinging, rocky white heads. Flavors and aromas will vary. Some have natural spice characters from yeast and hops, while others are spiced.



This Belgian-style strong golden ale showcases a variety of the ingredients and brewing methods that help differentiate Flying Fish beers. The Grand Cru is fermented at a higher temperature than our other beers adding an undercurrent of fruitiness and clove (although there is no fruit or spice in the beer). Very lightly filtered, the Grand Cru exhibits complex mouthfeel, strong malt flavors, a spicy hop presence and a soothing alcohol warmth, followed by a clean, dry finish. It is excellent with food as well as served by itself. Available October 1 to February 1.

Beverage Type: Doppelbock Bocks are relatively strong German lagers. Doppelbocks--as the name might suggest--are typically even stronger and contain enough malty goodness that they’ve been considered a meal in a glass for centuries. Generally they have a very full-bodied flavor and are darker than their little Bock brothers and sisters and a higher level of alcohol too. They range in color from dark amber to nearly black, and dark versions often have slight chocolate or roasted characters.



One can not help but appreciate Samuel Adams Double Bock's huge malt character. We use an enormous amount of malt, half a pound per bottle, to brew this intensely rich lager. Its deep brown-ruby color is all made in the kettle - no black malt is used, resulting in a rich sweetness that is free of the rough taste of burnt malt. All that remains is the velvet smooth flavor and mouthfeel of the two row malt. Samuel Adams Double Bock's intense malt character is balanced with a subtle piney, citrus hop note from the German Noble hops.

Beverage Type: American Porter Inspired from the now wavering English Porter, the American Porter is the ingenuous creation from that. Thankfully with lots of innovation and originality American brewers have taken this style to a new level. Whether it is highly hopping the brew, using smoked malts, or adding coffee or chocolate to compliment the burnt flavor associated with this style. Some are even barrel aged in Bourbon or whiskey barrels. The hop bitterness range is quite wide but most are balanced. Many are just easy drinking session porters as well



Stegmaier Porter is brewed with a combination of domestic six-row barleys and various roasted malts. This timeless brew is accented with a combination of Tettnang and Cascade hops. Fermented at high temperatures with our in-house ale yeast, the final product releases a roasted aroma with faint hop overtones. The flavor presents a grainy, slightly burnt malt background. It delivers tones of dark chocolate, accented with a slight coffee bitterness to round out the flavor. Stegmaier Porter is opaque brown in color and boasts a full, creamy head.

Beverage Type: English Barleywine Despite its name, a Barleywine (or Barley Wine) is very much a beer, albeit a very strong and often intense beer! In fact, it's one of the strongest of the beer styles. Lively and fruity, sometimes sweet, sometimes bittersweet, but always alcoholic. A brew of this strength and complexity can be a challenge to the palate. Expect anything from an amber to dark brown colored beer, with aromas ranging from intense fruits to intense hops. Body is typically thick, alcohol will definitely be perceived, and flavors can range from dominant fruits to palate smacking, resiny hops.

English varieties are quite different from the American efforts, what sets them apart is usually the American versions are insanely hopped to make for a more bitter and hop flavored brew, typically using American high alpha oil hops. English version tend to be more rounded and balanced between malt and hops, with a slightly lower alcohol content, though this is not always the case.



Insanity is made by aging our perfectly balanced Blithering Idiot Barleywine in oak bourbon casks. This incredible combination creates a melange of flavors such as malt, dates, oak, vanilla, and bourbon just to name a few.

Rich, velvety and deliciously complex, Old Heathen is a truly distinctive winter warmer. We use seven types of malt and two varieties of hops to bring forth this big brew. Quite robust and roasty on the palate, Old Heathen imperial stout has a wonderfully fruity nose and a moderately dry finish. The taste is highly complex- perhaps you'll even discern notes of espresso or chocolate.

Beverage Type: Quadrupel (Quad) Inspired by the Trappist brewers of Belgium, a Quadrupel is a Belgian style ale of great strength with bolder flavor compared to its Dubbel and Tripel sister styles. Typically a dark creation that ranges within the deep red, brown and garnet hues. Full bodied with a rich malty palate. Phenols are usually at a moderate level. Sweet with a low bitterness yet a well perceived alcohol.



Massively big and delicious, QUAD is an elegant and dark ale. Rich with complexity and flavor, try savoring it after a long day or during a fine dinner. You also might enjoy it as an aperitif or as an accompaniment to a dessert, but QUAD stands alone quite well. We recommend enjoying QUAD in a brandy snifter or wineglass so you can drink in the aroma of this fine elixir. QUAD, with an alcohol content of 11.8% (by volume) is the strongest beer we make, so please pay proper accord as you enjoy it.

Beverage Type: Winter Warmer These malty sweet offerings tend to be a favorite winter seasonal. Big malt presence, both in flavor and body. The color ranges from brownish reds to nearly pitch black. Hop bitterness is generally low, leveled and balanced, but hop character can be pronounced. Alcohol warmth is not uncommon.

Many English versions contain no spices, though some brewers of spiced winter seasonal ales will slap "Winter Warmer" on the label. Those that are spiced, tend to follow the "wassail" tradition of blending robust ales with mixed spices, before hops became the chief "spice" in beer. American varieties many have a larger presences of hops both in bitterness and flavor.
